At the Skinny Pancake, we believe in the importance of the double bottom line: Þnancial viability and socially responsible business practices. We source as much of our food from the local economy as possible. Before we opened the restaurant in 2006, our Church St cart was the first vending cart ever in the Vermont Fresh Network. We now work with over 40 local farms & value-added producers.
