Our Commitment

The Skinny Pancake is deeply committed to the ideals of social entrepreneurship. We believe in the importance and potential of the double bottom line: financial viability and socially responsible business practices.

In keeping with our belief in the importance of sustainability, we source as much of our food from the local economy possible. Before we opened the restaurant in 2006, our Church St cart was the first vending cart ever in the Vermont Fresh Network. We now work with over 40 local farms & value-added producers.

Beyond our serious efforts to participate in the local food movement, we work to contribute to the conversations surrounding "food system sustainability", including composting/waste management, campaiging against the massive overuse of disposable water bottles & using veggie-oil vehicles for transportation & distribution.
